soupWinter is soon here and I thought that a recipe on a warm and filling soup is well needed. This is a soup that I started to do a couple of years ago and it is a dish that I go back to whenever I don’t have much time to cook, it´s also an excellent dish to freeze for another day. This recipe is vegetarian and even if you get the protein from the lentils if you want to add some meat you can just fry some chorizo, or some other spicy sausage, to add at the end.

Serves 4 people.

Ingredients:

  • 1 onion
  • 1 tbs oil
  • 10 dl vegetable broth
  • 2 dl red lentils
  • 2 bay leaves
  • 400g crushed tomatoes
  • 2 garlic cloves
  • Spice after taste: paprika powder, cumin, chilli, cayenne pepper

 

Recipe:

  1. Chop and fry the onion in the oil on medium heat until soft
  2. Rinse the lentils
  3. Add the garlic, vegetable broth, red lentils, bay leaves, crushed tomatoes and spices
  4. Let it boil under the lid in 15 minutes or until the lentils are done
  5. (Optional) Slice and fry the sausage and add to the soup when it is done
  6. Remember to take out the bay leafs when the soup is done
  7. Enjoy!
