Sausage, spinach and butterbean stir fry PicThis is a really quick, simple and tasty way to boost your intake of lovely greens, in this case spinach.Spinach is said to restore energy levels, increase vitality and improve the quality of the blood. This is due to its high level of iron which plays a central role in the function of red blood cells which help in transporting oxygen around the body, in energy creation and DNA production. It is also a great source of vitamin K which aids bone health. Not a boring green veg after all, and if you pair it with low-calorie, high fibre butter beans it keeps you fuller for longer. Plus some good quality sausages to enhance your protein intake, you’re looking at one mean meal!

Serves 2 (but if cooking for one, you can have a tasty lunch the next day)

Ingredients:

  • 1 clove of garlic, finely chopped
  • 1 onion sliced thinly
  • 4 good quality sausages, removed from the skin and left in good sized chunks
  • 1 drained can of butter beans
  • 1 pack of spinach

Recipe:

In a large saucepan or wok heat some oil, then fry the garlic and onion until soft. Add the sausage meat and fry until cooked and edges of the chunks start to brown. Throw in the butter beans and season with salt and pepper, and if you want a spicy kick add a tea spoon of chilli here. Now gradually add the spinach, don’t be think there is way too much as it will shrink, so you can pack plenty in. Once the spinach has all been added and combined you’re ready to serve.
